Master the Spice Pantry

Stock pul biber (Aleppo pepper), sumac, cumin, and dried mint. These four spices alone define the backbone of Anatolian cooking — each one building layers of warmth and depth that no substitute can replicate.

Salça is Non-Negotiable

Biber salçası — sun-dried red pepper paste — is the starting point for countless stews, stuffings, and sauces. Use the mild variety as a base and the hot for a finishing kick. Always sauté it in olive oil first to bloom its flavour.

Low & Slow for Legumes

Lentils, chickpeas, and white beans are pillars of the Turkish table. Soak dried legumes overnight, then simmer gently with a bay leaf and a sliver of onion. Rushing this step is the single most common mistake — patience transforms them from starchy to silky.

The Kavurma Technique

Many Turkish dishes begin with kavurma — a slow sauté of onions in butter or olive oil until deeply golden and sweet. Don't skip ahead. This caramelised base is the invisible foundation of mezes, pilafs, and braises alike.
